Im trying to run a 3 monitor set up (2 screens and a projector) for work. In display settings it is only recognizing my 2 other displays as small squares and is forcing me to use a small portion of my main display to drag windows over. Is there anyway to adjust the size of the other displays so I could use the whole span of the length/width of the main display? I tried searching on google and was kept getting hits on resolution which isn't doing anything for me.

Have you tried restarting your computer?

Set the 2nd monitor as the main display. Then you can use your 1st monitor's full screen.

I'm not positive, but I think what you're seeing is all screens being limited to the resolution of the projector. You should be able to set the resolution for each individually, but I've seen this happen a number of times and sometimes it works and sometimes not.

EDIT: Do you have a screenshot of that same Windows setting screen but showing the projector, too?

This, and I am unsure of any solutions.
I would mess with setting the resolutions differently as well, just to see if you have any luck.

If you have Nvidia control panel, it may be worth trying to utilize that to manipulate it as well.

Are all of the connections digital? I’ve had issues having one vga and others hdmi or DisplayPort mixing analog and digital.

yeah, I'm no help. I have tried various wireless displays over the years and always have issues with them being reliable and very functional. We ended up using a clickshare with some success but they're fairly expensive.
