Plex Server - Alternative to Windows 10?

I have an Intel NUC that I've used for ~3 years as a Plex server. I swear every other time Windows 10 updates, I get into a boot BSOD cycle that I am just tired of fighting....my server is currently down to another, different, error message that I'm thinking is due to the GPU driver being shite on the latest update, but who knows.

The NUC does nothing but run Plex and very rarely browsing. Is there a good open source Linux OS I can use? It's been 20 years since I messed with Linux, was Red Hat back then, so looking for some suggestions.

I use Ubuntu, but any will do. Plex provides packages as .deb (Debian/Ubuntu/etc) and .rpm (RedHat/Fedora/Cent/SUSE/etc), so just whatever is easiest for you.

If you're new to Linux then Ubuntu is a good option. Ubuntu was easy to install on my NUC and provided the sound and wireless drivers.

You could technically run Ubuntu server, keep it headless (without gui) even set it to auto patch itself and you might be able to get away with never having to touch it. Plex has a ppa (repository) so it'll update with the rest of the OS. If you're less familiar with Linux then you'll be fine with just running desktop Ubuntu and running plex server on that.

I have zero issues using a 10TB HD on an nVidia Shield as my Plex server.

I use OpenMediaVault w/ docker containers (its hosted off my NAS basically). There are a few simple YouTube videos for set up as well.

If you didnt want to host a NAS, pretty sure there are some simple docker containers out there with instructions.
