It says unsupported when I type in msinfo32 in the run box
Have you tried to run the upgrade from your settings? Or pc health check? Those usually tell you what you would need to do to qualify for Windows 11. I have a hard time believing that your hardware would not be compatible.

What's "grading to 11" compared to me buying windows 11 and putting it on a flash drive to install?
Nothing. Upgrading to 11 within windows 10 or creating install media will be the same thing. Windows 11 is built on the 10 platform and will allow you to keep files/programs or wipe clean the harddrive.
The upgrade from 10 to 11 was free for a while, but I think you'll need an 11 key to activate. Other than that, you should be good, once you work out the compatibility issued from your op.

Well hell. Maybe I'm making this harder than it needs to be. I need to see if I can just upgrade through Windows itself rather than go through the flashing process

Getting off thread, but you're a youngster if in college you didn't have to set a binary start address with rocker switches and load a punched paper boot strip. First PC was an Osbourne with a 40 character-wide CRT. Favorite language...solder.

If I remember correctly, when you go to update to 11 inside 10, it will run a system check and let you know what isn't compatible, if anything.
Once you try, report back if there is an issue. Also, if you get asked for a activation key, just skip. It will still work and you can get a key and activate later. You just won't be able to personalize anything like your background, theme and stuff like that.

When I go to Windows Update, top right corner says does not meet Windows 11 requirements. Does not say further details. It's only when I go to the PC Health Check program from Microsoft does it say "unsupported"
Will simply switching from legacy to UEFI in BIOS screw up my system? This may be as simple as a toggle of a switch.
Also - just noticed I have the ability to "enroll" in extended security updates for Windows 10 for the next year
ETA: I clicked "enroll" and it said I was good for another year at no extra cost

It won't screw anything up, but if you switch, it won't be able to find the correct boot files.

Unless you’re formatted ZFS(not windows supported) you can’t just move partitions around.
Gotta wipe that shite and set it up in a modern format. Hopefully back up your good stuff.

Most likely. However, there are some youtube guides that show how to change without losing anything. I have not tried this ever. If you have the means to back up the drive, then back it up first.
