Preferably mesh, or anything more breathable than leather, something in the $200-300 range that is comfortable to sit in for a couple hours at a time.

If you can find a used Herman Miller Aeron, you won’t be disappointed. You can always find them here in the $450-500 range.
Maybe the Steelcase Leap if you are looking for discounted über-high quality chair.
Otherwise, there are a lot of knock off mesh chairs in that range. I bought one once. I wasn’t too happy with it, so I eventually found the Aeron cheaper and am very happy to have done so.
I also bought roller blade wheels for it so it glides on my wooden office floor without a mat and no scratches.

The Hon Ignition 2.0, mid height is a pretty good chair with a mesh back and either mesh seat or padded seat. I have one and like it.
My daughter has the mesh chair that Costco sells and loves it. It’s too small for me. She’s about 5’ 6” and I’m just over 6’.

Many will scoff at the idea but have you thought about a chair with no back (aka a stool)?
Mine is a Cramer Industries "med stool". I've been using it for two years now in my home office. That's roughly 8 hours a day at my desk though I do get up fairly frequently. No back sweat and as a bonus my posture has improved.
Of course this may not be appropriate in a more formal setting.

I love my Herman Miller Embody (not mesh). While price is steep, part of that cost is the 12 year warranty. As someone with mild back problems, it's a worthwhile investment just like a good bed.
