Would prefer not to lose any photos. I see videos online recommending restoring it, would this lose the photos.

Depends on if you have it backed up. Or is your photos stored in icloud?

I don't have all my photos in Icloud or any other service. Phone won't seem to successfully update when plugged into Mac. Trying to avoid restoring it. Is this something the apple store could help with?

Yes, Apple store handled this exact thing for me. Phone did not have enough storage for overnight update so it got stuck in the process.

Apple stores are closed right now. Hope to take it there eventually.

How did they fix it?

It is a 7. Have tried all sorts of stuff. Giving an error message that recommends restoring. Trying to update to avoid this.
