My wants to start working from home more. She has dual 27 inch monitors at work and would like the same at home. What’s the cheapest way to go about this?

I would consider buying a dual monitor stand that clamps onto the desk/work table. It gives better adjustment for working.
I don't suggest stands that sit on the table top because they can tip easily if you move the monitors forward.
I bought 2 Dell 27" monitors 3 years ago and they were quite reasonable compared to others at that time. Not sure if they were replacing them with a newer model.

Look at Costco they have cheap monitors. I bought mine through Best Buy. Also highly recommend curve monitors

Make sure the dock she uses has multiple video options and supports dual monitors. I don't recall ever seeing.one that doesn't, but just as soon as I say something you'll find one. It's pretty much plug and play, then setting how you want the monitors to behave (mirror, extend, duplicate, etc.) If you want to just make one massive work area, just choose "extend display" in the display options of your OS.
