I have what I believe is a bad Wi-Fi router at a relative’s house. I have bought a replacement router. Trouble is, the home has only DSL connections (plain 2-pair copper wires) but the new router only has cat 5 connections. Is there an adapter available for this?

You need a DSL modem.

Your relatives probably have DSL router, which is a combination DSL modem and router.

use the old gateway in transparent bridge mode with the new router. You shouldn't need to buy anything else.

Please explain how one would do this. I am assuming you mean to use the old equipment in series with the new….

Google the model of device and bridge mode. You’ll be forwarding internet connection to your new router instead of the ISP all in one device

It should be spelled out in the settings of the old gateway. You want to use it as a modem only and that mode is called bridge mode or transparent bridge depending on the device. Once you have that in bridge mode, you use it as a modem and connect it to the WAN port of the new router. you'll have to handle all the authentication (if required) on the new router.

Easiest thing do to is go to the admin page if dsl router and turn off the wifi. Then just hook wan port of new router into any one of the network ports in dsl router. Then use new routers wifi. Yes it is a double NAT but I doubt your relatives have anything fancy to worry about.

The new router should have an access point mode to avoid double Nat and that would likely be easiest solution.
