Calling Minecraft Nerds

So my 13yo son just discovered MineCraft, and having a lot more fun with it than I would have imagined (playing survival mode)
Any of you guys have experience with setting up/maintaining a MC server? Looking for ideas to make it a little better for him (and his friends) to keep them entertained through the summer and beyond.
Suggestions?
Here is where it stands so far;
-MC Server is running on a stripped Ubuntu 20 server (2 cpu's @ 3.3Ghz and 6G RAM)
-Installed Multiverse over Spigot (4 worlds for now) (MV Portals is installed but waiting to be set up)
-Found a really nice 32x resource pack that I like, wanted it to go easy on lower end clients (pushed from separate httpd server).
-White-list is in play to keep the clowns out.
Max load for a while is not expected to exceed a dozen or so concurrent users which only eats 50% allocated resources but PLENTY more are available on demand.
BTW, I tried the MC server on Win10 VM with the same resources, that sucked rocks even with a single user.

Use the search cause i know there was a detailed post in the recent years with some good info along the lines of what you’re looking for

I run a simple FTB server in a Ubuntu VM. FTB makes everything pretty simple with their packs and the packs are a lot of fun. Make the start.sh run on boot and there should never be any issues
Windows 10 VMs are pretty annoying with RAM ballooning and initial driver setup. I have a rust server on one because it was much easier to get going, but I got the LTSB version going (less bloat). Does suck having to put an extra 2-4gb RAM just for W10 though

I hadn't run into the FTB variant until just now. Might have to play around with it.
So far the boys have been quite busy building for days on end, so I must have done something right.
