From what I remember, if it’s truly Bluetooth, meaning no wire from tv to sound bar, then the sound is off by a split second.. right?

Optical cable best way to go with wireless sub?

I have the yamaha YAS-207 soundbar with wireless/bluetooth sub. Personally, for the price, its a great system. I have an optical cable from the soundbar to my TV, only because i don't have a new enough TV to use the HDMI connection configuration they suggest. The DTS virtual sound is pretty impressive in my living room and the sub provides more than enough bass to give a movie depth.

The only 2 drawbacks i'll mention is that the sub tends to lose bluetooth sync and the soundbar won't play sound. The sub bluetooth sync is more common than the soundbar not playing. I have to unplug it and plug it right back in and am good. I know that sounds like a rather large drawback but i personally think that is the risk with any bluetooth system.

All that said, i really enjoy the cost to benefit of this system and i'm glad i got it.

I am pretty sure any of those worth their weight will have the ability to adjust the audio up or back to correct any lag. But you'll want to confirm.
