I agree with most of what your saying . Lets not argue about specifics , Atleast we can agree there is a problem while others dismiss it as this tin foil hat conspiracy. Your data is big money to some and a means of control to others and to think they are not actively try to get such data is insanity.
A device , in your home that's listening to everything 24-7 is insanity .

But people have flip phones for that reason.. like that prevents it.

We do . I rock a fabulous late 90's style flip phone paid for by my job . Its neither smart nor glamorous but it gets the job done .
Not sure about others but with iphones - all the spying features - siri - location services , etc can be turned off . Not sure id still trust that but its better than being integrated into your home and listening 24-7 like Alexa etc. You can also just turn the phone off . Not sure how turning off Alexa would work with some having it all integrated to turn your shower on when you pass a towel by it and all.

There’s no avoiding it other than creating laws limiting what companies can do with personal data. They are able to create fairly accurate profiles even on off the grid people based on the information your friends give up about you.

It will be interesting to see if Apples' marketing campaign built around privacy is able to make any headway. Their supposed plan is to move as much AI on device as possible. Considering how far behind Siri has fallen they have a lot to prove before they can even think about setting standards in this area, but they did hire away Google's former head of AI to fix Siri.
