In the market for a new phone and oneplus5t just seems to have everything I'm looking for at the right price point. My only hesitation is that they're a Chinese company and I'm not sure how customer service will play out if my phone is a dud. I plan on directly purchasing from them so hopefully they will take care of men. Anybody had good/bad experiences with them before?

You are aware that Apple doesn't make iPhones, a Chinese company (Foxconn) does?

Apple provides customer service for all their devices which is what the OP is concerned about. Who manufactures the phone is irrelevant. Foxconn makes a large majority of phones but they aren’t who you call when there’s a problem.
ETA: OP I’ve had a One Plus One and Two and both were great phones. Basically stock Android with some good additions. One Plus makes a quality device but I haven’t had experience with their customer service.

I love my 3T. Never had any issues. Phone is still very fast and stable. They make the best value smartphones, no question.
