1 coaxial, 3 RCAs, 2 hdmi, all into a single hdmi?

I want to commect all of my old gaming aystems through a wall pass through using a single hdmi cable.
About the only idea I have is an older AV reveiver.

Something like that might exist, but that's a level of specific that might cause you issues. With that said, there are RCA switches like this:

That you could then run alongside a separate solution for the rest, like a simple HDMI splitter.
ETA: Now that I've had a few more sips of coffee and read your OP again, I now realize that solution won't work for you at all. That's... a tall order.

You could use an AV Receiver that supports analog to digital upconversion. You mentioned coaxial. The receiver won't support that. You likely can use another cable for that device to have RCA output.

The only way to make it work is a coaxial to HDMI adapter, (3) rca to HDMI converter(s) into an automatically sensing HDMI switching box.

Agree 100%. Personally I'd run 2 wires. 1 HDMI and the Coax.

I Just modified my old Atari 7800 to output an s-video signal.
Your best bet to get a good picture on a modern tv is to use an upscaler. The cheap RCA to HDMI converters on Amazon are horrible. If you want a good picture you will need something like a Retrotink 2X-pro. They are pricey, but my nearly 40 year old 7800 now puts out a picture that matches the quality of the new 2600+. If you have multiple systems, I'm sure you can still get RCA switches.
On your RF console, you might check to see if you can get a composite mod installed.
