One baker does not have a monopoly on baking cakes. Hence, a gay couple being denied service can go elsewhere to have their cake baked.
Facebook and Twitter essentially have a monopoly on social networking. Not only do they have a monopoly but they are colluding to stamp out start-ups. Since people can't go elsewhere to participate in the 'virtual public square', they should be regulated.
That's the difference.
