Aren't there plenty of chefs in New York City who are trained in cooking ethnic cuisine--Venezuelan, Honduran, Guatemalan, etc? These folks didn't travel on foot thousands of miles through the jungles and deserts of South and Central America to get treated to cafeteria food not as good as Piccadilly, or even Graham Hall!
