Candidate poll bounces after their respective conventions used to be a lot more profound.

Looks like the major networks had a big impact during the 70s, 80s and 90s. The onset of Fox News appears to have quelled major network influence around 2004 and now social media is the main source of influence.

I would think it was because the convention was the first time the vast majority of voters saw a candidate speak. Whereas now the candidate is seen everywhere.

Well people actually used to get to vote for their candidates. Democrats hate democracy and prefer the King maker method
