I have the same exact kayak with a trolling motor on it. I fish almost every weekend in PAC with it. This is what I have and how I set it up:
1) the motor - I have the 30lb 30" trolling motor.
2) The battery - I looked into a few different sizes. I ended up getting this one. Its about 22lbs, so it doesnt add too much weight. I have only run it dead a couple of times and usually cover 7-8 miles. I use it to get out, then i pick it up and paddle around. then use it to get back in.
Battery

3) The charger - I use a NOCO one that they sell at Batteries Plus. It takes over 24 hours to charge, so I ended up getting a second battery in case I fish on back to back days

4) Rigging - I place the battery in the front of the kayak to help offset a little of the weight. I slide the seat up so that the front of the seat is just over the front of the gun-butt holder on the floor and I put my fish ice chest directly behind my seat. I found an old crate that is rectangular and fits perfectly in the back area. I also took the head off the trolling motor and moved the switch right next to my seat and built a steering arm so I can turn it without turning around. ..
5) I use mine strictly in saltwater. The first time I took the prop off and soaked it. After that, I would soak it in fresh water, but now I dont even worry about it. Its already lasted a year, so if I have to buy another one this year, I would say its worth it.
I dont have any pics of how I have mine configured, but can help you out if you need.

Has anyone considered the Nucanoe Frontier over the KC?

That Nucanoe is 41" wide. Has to be super stable.

I have the same setup.
I have a 36lb motor.
Battery in the front. Still have room for the soft ice chest.
Put battery in battery box. Power center is overkill.
Run wire externally from front to back. No need to drill into the kayak.
Trolling motor handle extension.
No need for a portable battery charger. You're really only going to use it getting to and from the launch.

I have the Nucanoe Frontier 12 with a Minn Kota 45 pound thrust Riptide. It does have a 36” shaft, and I think 30” would be better, but it’s not a huge deal for me. I may cut it down one day, but probably never do it. I suggest the 45# because, as others said, you can run it at lower power using less battery. Also, sometimes the wind and tides will not be in your favor and it’s nice to have that power. Check out the Plug and Play transom kits that Nucanoe has to offer. Nucanoe I bought one and it comes with everything you need to get setup. I bought my yak from Pack and Paddle, and they installed everything for free….can’t beat that. I forget what battery I have, but it’s a small one I got at Academy. I only use trolling motor to get between spots so I haven’t come close to running out of juice. I have even towed other yaks back to the launch so they didn’t have to paddle. If you want a yak specifically for a trolling motor, the Frontier is a no brainer. The transom is ready to mount a motor, the yak is stupid stable. I needed to adjust my motor the other day while on the water and I was able to walk over my seat and stand in the back of the yak and not even come close to losing my balance. I can walk from one end to the other. As far as paddling, you aren’t going to win races, but that’s what the trolling motor is for. I can’t recommend this setup enough. Tight lines.

What do you do with the wire? Do you tape it to the side of the boat so it's not in the way or loose to get snagged on something?

I just run it underneath the seat. It doesn't get caught on anything. You can see the wire below.

It seems to do everything great. Stable. Durable. Tracks well. Great layout. Badass seat. Motor capable. Cheaper than KC.

There's a cheap saltwater TM made by Newport Vessels that gets great reviews on Amazon.

I just run mine on the floor. It doesnt get caught on anything for me. I used a heave 10 or 8 gauge cable on mine. Used one smaller at first but had to change everything out after 6 months. Figure overkill wont hurt

After seeing yours and the other post about running it on the floor, I thought about using some stick-on command strip hooks on the side of the hull to get it up off the floor. That way I could try the battery out on the front and back of the boat and see what I prefer before I drill in anything.

You could get this bad boy (16 pounds $400), and a gas bladder with 5 gallons of gas for the same weight

Seems like a better than the lehr propane tank I was talking about..the motor is about $1600..this is what it looks like..I have not really liked that much into it to know how far a propane canister will take you but it just fits into the motor..
