That was someone's dog from the ot. I think it had went missing or something so I made that up.


Ken makes a jalapeño cheese sausage that is bad arse and I don't even like jalapeños.

Indian Mound on Liberty Rd in Central makes some good deer sausage. While your there get yourself a JC burger and a large bag of jerkey, you wont regret it.

Where ever I had it from was good, but that's been 15 yrs ago, too. Sausage had a "crispy" casing that was easy to bite through.

There's a reason Vine's has been mentioned 3 times already. It is easily the best smoked sausage on earth.

I bring a whole deer there to keep me stocked.

In second place is Ken's Jalapeno and Cheese- also a reason why it's been mentioned more than once.

If you don't want to go to Centreville, hit up Ken's and get him to tenderize your backstraps- you'll never eat them any other way. The grillades are as good as claimed earlier.

Vines sausage is good, but nothing to write home about. It's also absurdly expensive. I live in C'ville and couldn't tell you the last time I bought any.

I've used Vines - damn good
Tremonte's - expensive - not impressed
Fortenberry's - meh

and a place in port allen but I can't remember the name. Wasn't worth a shite

I debone all my venison prior to bringing it anywhere and mix it 60/40. Cajun smoked w/ green onion or Jalapeno Cheddar.

I grind 15lbs of brisket or boston butt with 40-45 lbs of venison for ground meat, which I do myself. Its incredible

Ken's in Raceland does excellent work. Lots of processing choices and everything is vacuum packed.
