Had the chance to eat fermented beaver tail but after the fermented seal flipper, no way in hell was I going there.

Fermented (Natives do this) is basically rotten. Buried in the beach sands for a long period of time.

The bizzare foods show had some kind of Icelandic rotten shark on there. I almost hurled just watching it.



That show is coming here next month. I did some logistical stuff for their people.

Texture is horrible. Friend of mine is a chef and he was trying to tell me it was a new veal recipe. I knew it wasn't immediately.

I have tried Muktuk (whale) and its awful.

Bear sausage is pretty popular and you would have a hard time telling what it is.

I have some Black Bear in the freezer now. It cooks a lot like pork. Very greasy, so I have to trim the sirloin pretty lean. It was a spring bear, so it's diet was mostly berries which gives it a cleaner taste than a fall bear that eats primarily fish and camp garbage.

I make Alaskan Spaghetti with bear meatballs and caribou Italian sausage. It's pretty damned good.

It's pretty damn fatty and greasy.

I could do it in survival situations but not gonna make a habit of eating it regularly.

Strangest I had was Ostrich and Rattlesnake.

Ostrich was surprisingly very good and the rattlesnake was fried so it naturally tasted good.

Killed, cleaned, and fried a ground rattler once. Tasted good but it was pretty stringy.

Cleaned a gar and just fileted and fried it. It tasted good but was way too chewy for my likin. I've never had gar balls but I would imagine they'd be pretty tasty.
