There is no 100% legal way to do it in the state of Louisiana. There are loopholes that you can take advantage of, but at the end of the day it is not legal. What the poster describes above me is actually one pathway. If the unit is initially registered and meets the requirements for being street legal in another state, rather than the title saying ORV as the vehicle type it will say Auto.
At which point Louisiana will be perfectly fine issuing a street plate on the unit.
Having said all of that, every side by side I have purchased in the last 5 years has been street-plated using the loophole through other states. While I initially would push the boundaries and drive it on the interstate, I now typically stay in my area and within about 15 to 20 miles of my house.
I keep going back and forth between a new Ridge and a new Northstar, but I hear Honda is supposed to release a HVAC model soon. While I don't like the pioneer, it is definitely the one to put a bunch of miles on.
