I try not to put up more than I'll eat but I never throw any. Every once and a while I may give some away before they've been in there too long. I do freeze everything in water though.

do any of you have a system for putting them away. like 6 speck fillets is perfect for two people. or half a quart bag is good for 4 people etc.

I usually put in each bag enough for two people (usually 5-6 small fillets or bigger fillets cut up to make about the same portion). It's easy to thaw out that way and have one meal.I vaccuum pack my fish and it rarely lasts past 3-4 months in my freezer. I eat it every week. Most of the time I'm just searing it in a little olive oil so it's not unhealthy.

Never -- we freeze filets (double bag with water in each bag, squeeze out all the water) in QUART bags. We label the bags with date, and eat oldest fish first. When frying fish it's pretty easy to figure out how many bags to thaw - rerely if ever have any go to waste.

Fish that are 2-3 years old taste as good as fish 3 weeks old, I'm referring to sac-au-lait, bream, goggleye, and small bass.

Larger bass are usually released when caught.

Salt water fish (except) flounder are given away (before cleaning). Anybody wants to eat redfish or specks can clean 'em.

Never anymore. Vacmaster was the best purchase I ever made, especially when friends come to seal their game.

just give it to your local food bank. they usually have one of those "Hunters for the Hungry" deals before the beginning of the season.
