Sorry-Another Deer Processing Question

I’ve read all the previous threads, but many of the places listed aren’t taking deer because they are full. I’m in Baton Rouge, but willing to drive. Would love to find someone to make smoked snack sticks (Slim Jim style). Curters has two, still have some last year sausage from Tee Wayne’s, tamales being made at Romero’s. Would like some smoked sausage from another spot and we are all doing some trading around. So I’ll be getting Bahm’s, Vann’s and the ones I’ve got when the dust settles. Any feedback on places between BR and Jackson, MS, heading up for one last sit this week. Anyone used Blaylocks? Places closer around here like Juniors or Days or others?

I bring mine to Cutrer's in Kentwood. Great people and quick turnaround. I do not believe they do the snack sticks though.

Debone your deer, clean it up, and freeze it so you can bring it where you want when they are taking deer. If it's a short term freeze use ziplock bags, if longer vac seal them. I rarely bring deer during the season and have operated this way for a while.

Benoit's in Addis makes a good smoked sausage. Not sure if they are taking at the moment.

Vines never turns any down, have one there now.
Have done 1 at Robert's and he does a good job. FIL brings all his deer to Robert. Never heard him sat anything about not accepting deer. His deer burritos are excellent. I like vines smoked sausage better than Roberts but that is just personal preference.

Cutrer’s has two of mine now. Echo what you say about what super nice people they are, Raymond is as good as they come. Just looking to get a little variety.
Also saw Stacie’s recommended, they said I needed to call the day I was coming and they would let me know. Several suggested freezing it and bringing it later, I’m just too damn busy to bone this one out right now, and the camp I was in didn’t have any sort of cleaning table to do it there.
