Looking into building myself a smoke house and can't decide exactly what I want. Any suggestions? Pictures of ones that you have?

I have a friend who has one built out of cedar at his "country house". Easy to use and everything comes out damn good. Looks like a lot of plans available online. Post a pic when building or completed!
Looks like this. Maybe a little wider. It burns wood/charcoal. Not propane like the one shown.

Got one build out of center blocks. Works great and has with stood every hurricane since my grand father built it in 1962.
