Do you leave skin on/fat for specks? I was told that makes them taste gamey.

I have one someone gave me and have seen you post this Duck Ville Platte several times and really want to try it...

I find the taste of doves comparable to that of teal and/or specks. Mine are going in a gravy.

OP...listen to the advice of Otis and Geauxtiga, they have led you to the promised land of pot roasted teal (except the apple,I don't know about that) and building the gravy as geauxtiga has instructed will make the dish.
