Race what? Cleaning a deer? I've never really timed myself but it would be interesting to see how quickly I could do one. I will "time" myself this weekend.

If the blade is stainless, it won't hold an edge for squat, but if it is chrome vanadium or other high carbon steel it should hold an edge pretty well.
