Any way to get this smoker less than 225°?

Buy an aftermarket PID controller. The one that comes with the master built is dogshit

I would think it's pretty easy to do.

Anyone else have a problem with their fan not coming on sometimes. Masterbuilt’s customer service is non existent.

Have had it happen twice. Both times, all it took to get it going was a little nudge from a butter knife. Very small particles can jam it.

One follow up here. I found when I tried to start it at a really low temp sometimes it would work and sometimes I would get that damn beeping that the fire wasn’t lit.
So when I want to start off at a really low temp I will normally light it and run it up to 250 to make sure the fire is lit. Once it hits 250 and holds I will back it down to 175.

That was my issue as well. I thought achieving 160 was impossible. But figured out the same way you described.
