IR thermometer for frying turkey's, etc...

Anyone use them for grease temp? I'm wanting to buy one for my pops for his Turkey setup. Thanksgiving this year we had three classic style thermometers and they were off a bit each so we averaged. Annoying. I'd like to get an IR. Also curious how it would work on fish frying setups with them being so much more shallow.

I've used them before, they worked well. I don't think depth has anything to do with it, it's reading the surface temp of the oil, not the bottom.

I am not sure about this, but I understand that they don't work too well with transparent liquids.....I am told that the reading will vary depending on the color of the pot.
I have been meaning to test this out and will try it out and report back when I get home.

IDK, they seem pretty good.
You'll use it wa more than you think.

Awesome. Thanks for the help. I have one but failed to bring it to thanksgiving. Won't fry again until Christmas. I appreciate it.

Ok...the test is complete.
my IR thermometer is a Fluke 62 Mini.
I put two pots of water on the stove...one in a very dark pot and the other was a shiny stainless steel pot. both had the same amount of water in them with the burner on high
the temp of the water in the black pot topped out at 210 degrees while at a rolling boil.
the temp of the water in the shiny pot topped out at 206 degrees at a rolling boil
I swapped burners with the pots and got basically the same results at 209 in the dark pot and 206 in the shiny pot
the difference could be due to a small difference in geometry between the pots....but the difference is really insignificant
I think the IR thermometer would work very well for checking oil temp when frying....

You can shoot the pot to get a decent temp

It works great until you set it near the fryer to long by accident.....

Temp of the pot is going to be much different than the temp of the oil. The temperature of the pot itself varies a good but between the top and bottom.

Difference is emissivity of the surfaces the IR thermometer is pointed at. Better IR thermometers and thermal cameras allow you to adjust the emissivity value to get a more accurate reading.

My dad and I have been using IR temp readers for years now for all our frying. They work very well, we fried 6 turkeys for Thanksgiving and that's all we used to keep our fryers in check.
