How Long Do You Age Your Venison?

When possible 24 hours in an ice chest or hanging in a stand up cooler.

My grandfather left a field-dressed doe in the trunk of his Buick for a week in 30-something degree temps.

in a wet ice chest? Hail No!!!! I've left em hangin in our cooler for a week, and on a screen porch in cold weather for a week, but I do my damndest to not let meat get wet... If you have to, then you have to,,, but I would do something with it if it's the same stuff that was in your truck the other night? Wasn't that right after Christmas?

Usually I leave it on ice about 2 days . I finally get my lazy arse to the processor after about 20 bucks in ice

3 days to a week in a cooler.

I've hung em up in a tree for as much as 5 days when we used to actually have cold winters here. In January in south Alabama (Pike County and Bullock County) I've quartered them and put em in an ice chest, keeping the meat constantly covered with ice for a week. But ya gotta have a drain plug in that ice chest like the other poster said.
