Both methods work equally well but vac sealed usually takes up less space

I used to freeze in water (keeps best IMO), but got a vac sealer for space saving.

I have never heard of freezing anything other than fish in water. It doesn’t mess up the meat?

Soak in salt water for an hour or two then put in a ziplock and put regular water up to cover all the meat completely and get the air out so they'll freeze flat. Least that is how we have always done it for duck breast.

Never soaked in salt water, but that’s basically what I did before I got a vacuum sealer.
