Not sure what length of hike you're looking for, but check out Louisiana Hikes on YouTube. His videos are kinda old, but it'll give you some ideas of a bunch of different types hikes.
LINK
My favorite Louisiana hiking trips:
Backbone Trail loop in either direction. It's a different hike depending on which way you go. I've also incorporated the Turpentine trail to add mileage.
Turpentine trail can be mad a small loop if you incorporate the Backbone trail.
The Kisatchie loop that Louisiana Hikes maps out is a nice loop trail if you want some miles. You can doctor that loop up a little too if you add the section of Turpentine and Backbone to make a small loop inside the larger loop.
Caroline Dormon trail is nice walk down either as an out and back or a one way.
Wild Azalea Trail can be made into a one way, you can yoyo it, or just section hike it.
Sandstone trail isn't bad but it's an ATV/dirtbike trail so it's very sandy and depending on the time of year you'll be contending with ORVs.

Everything he said. Backbone doesn’t have a waterfall but you’re doing yourself a disservice if you don’t hike it. Best trail in the state.
Also look for the Kisatchie Bayou campground. It’s at one end of the Caroline Dormon Trail. Nice clear water bayou with a rocky/sandy bottom.
