The meat is perfectly fine by itself. No need to add anything but a little pork fat because it is so lean. Everyone that says antelope tastes bad just doesn't know how to cook or doesn't really like wild game.

That goes for just about any wild game. Folks can run into issues with pronghorn due to the heat of early season hunts. I gutted mine quick and moved it into a shady area, then got it quartered and iced down quick. Even working fast I worked carefully getting the hide off to keep the hair off the meat.

I found it to be excellent table fare, not really all that different from venison.

Then again, I’ll cook and eat most any animal. I’ve made some excellent meals from javelina.

Nice speed goat!

22 yards is about pointblank range. I thought folks in New Mexico were lying when they would talk about killing Antelope at 80 yards with a bow. My neighbor had a pretty nice elk on the wall and when he told me he shot it at about 70 yards I said "damn, thats impressive" but I was thinking "damn, you're lying" LOL. As it turns out 50+ yards ain't unusual. The only thing I have ever killed with a bow have been deer in Georgia and I don't think I ever shot at one over 20 yards away and most were closer to 10. Tree stand hunting of course....stalking and still hunting (and killing) elk or antelope with a bow is damned impressive....

I'm in the South Atlantic these days. You can kill a wild sheep or rabbit.

The fishing is world class. You can catch 100+# yellow fin from the shore and they have caught 300+# yellowfin less than a mile from shore.

They also catch marlin here. The Bad Company fishing crew has been here several times and have caught 800+# marlin.

I think you, with first blood, should start the OB 2025-2026 Trophy Thread

The one I shot in Wyoming was terrible. Gloves still smelled like sage after washing twice, thru the next hunting season.
Sausage was good, steaks not so much.
Maybe the diet differences.
Congrats on the head start to 2025 and filling the freezer!!

I’ve always enjoyed antelope venison. I assume the bad reputation was from poorly cared for meat in warm weather.
