I’m not huge on tamales, but my dad is and LOVES the deer tamales from them.
My future FIL loves tamales, so maybe I’ll give them a shot. I believe they’ll do a minimum of 9lbs of deboned meat for a tamale run.

I don’t like armonds for many reasons. 1. They leave your stuff in ice chests for days at a time. Don’t really trust that they drain and refill 100 coolers sitting outside. 2. For the low quality sausage they make it’s expensive. 3. They don’t do their own tamales, a lady in picayune does them. 4. They mix everyone’s meat together. So if someone has dirty, gut shot meat, it gets mixed with yours. 5. I know the lady who rented a building to them, said when after she evicted them the place was disgusting with rodent and roach feces everywhere.
I like that fortenberrys brings my stuff in a bin straight into a cooler. They have a quick turn around. Price is fair and quality is amazing. I get my ground meat mixed with brisket and people who don’t eat deer can’t tell it’s wild game.
As for double D. I stopped going to them when I brought them 60# of trimmed and deboned clean meat and picked up 45# of sausage.

My FIL gets smoked sausage from them every few months, so they are doing something.
You also have Mannino's in Independence, they are only doing deer processing now I believe

I've used them for ground meat and enjoyed it. I believe it was bacon? What percentage brisket content do you get?

Ouch... They are cheap and quick and convenient, but I'm looking to make a move.

Not sure. I assume it’s a standard amount per pound. I just tell them to mix ground meat with brisket and it’s awesome. For their sausage I do 60/40 as I find 50/50 a little to greasy.
