Clint Smith gave the most cogent reason I've heard so far -- those grips are often tough to slide on, but slide off much easier if they become moist (e.g. bloody) during the encounter. If the "slip on" grip slides down, it can impede your ability to drop the mag ('cause it's empty, or to clear a double feed) and make it hard to insert a fresh mag.
Clint brought this up on TD One because one student had the Hogue slip-on grip on his gun. He borrowed my gun to show the class the "Decal Grips."
eta: Clint's point was, having the Hogue grip slide down may be somewhat unlikely, but it has happened. And if it does, the consequences can be severe.

Ayoob preaches this. A lot. I heard it from him several times when I took his MAG40 class.
FWIW a lot of other "brand name" instructors seem to not worry about either of those two admonitions. Not coincidentally (I suspect) is the fact that the guys who don't worry about these modifications live in red states.
Mas teaches his class in a wide range of states, and his presentation is uniform -- not altered for a specific locale.
I'm not suggesting that everyone//anyone should alter the trigger or a safety on a self-defense weapon. But if they live in Louisiana, and if the self defense shooting was justified, I wouldn't lose any sleep over having put an Apex trigger kit in an M&P, or a 3.5 lb connector in a Glock, or having removed the safety from an M&P Shield.
However, if the shooting isn't justifiable, all this changes. At that point you're gonna wish the pistol had been left 100% stock.
So TOTH's approach is definitely the safest.

Good point, dawg. I admit to being cautious; I want to keep my potential risks to a minimum instead of hoping the legal authorities will have the type of philosophy that will be fair to me.
