100% going to sue Academy and win here
The state probably has a statute shielding against liability for a suit brought by someone committing a crime.

theft has not occurred until after the item leaves the door
Wrong.

The reason for this policy in almost all retail settings is the merchandise is insured
I dont think a retailer is filing an insurance claim over a stolen item worth only a few hundred bucks. I’d imagine Academy would have a fairly decent sized deductible.
The reason for company policies not allowing employees to attempt to physically stop thieves is because the company would rather lose a few bucks worth of inventory to theft than face potential multi-million dollar lawsuits if an employee, thief, or bystander gets hurt or killed in the process of the employee trying to stop a shoplifter.

You're bringing entirely too much logic into this discussion, I'm going to have to ask you to strictly make emotional rebuttals.

No, just our entire judicial system. Academy is just playing by those rules.
