For physics to work, we have to believe we live in a rational universe, i.e. laws that work on Earth have to work on Saturn, have to work in the Andromeda Galaxy, have to work on the other end of the Universe...
Though, I don't believe we have it all figured out, and probably never will.

It's assumed that the laws of physics are constant everywhere because we have no evidence it isn't and no theoretical reason to believe otherwise.
That said, astronomers are aware it's possible and if you read research papers involving deep space observations there's usually a comment along those lines at least.

It isn't, just in our "known universe" - there are various multiverse theories - mainly regarding space that is outside the bubble of the known universe or the area which light has been able to travel since the beginning of time. Some of these theories include multiverses which may not have the same physical properties.
ETA: Look at some of Max Tegmark's work if interested, he gives pretty solid summaries and classification of various multi-verse theories

You been reading Piers Anthony? Or Andre Norton? Both have series that address varying physical reality and physic either within various regions of the universe or in parallel universes.
But there is some thought that there may be some variance throughout the universe as far back as 2010 https://www.sciencedaily.com/releases/2010/09/100909004112.htm

One of my favorite thoughts is that anti-matter exists in other areas of the Universe. We may just be in a very large pocket of matter and there might be similar areas of anti-matter and matter distributed throughout our enormous cosmos.
Alan Guth and others estimate the size of the Universe to be 100 billion trillion times the size of the observable universe, which is 93 billion light years across and contains 2 trillion galaxies. It seems silly not to think that the missing anti-matter from the Big Bang isn't out there, considering the incredible size of the Universe.
I also like to think that cosmic rays come from the boundaries of these anti-matter areas where they meet areas of matter.

Sorry to disappoint, but this isn't so.
Cosmic rays are 99% atomic nuclei stripped of their electrons and the rest are electrons (see LINK). They're thought to come from supernovas and black holes (or more properly, the area just outside a black hole).
Matter-antimatter annihilation results in completely different particles.

What else do you have to go by? Who knows what time and theories will be old or outdated when we reach beyond our galaxy.
