I use a dehydrator for venison jerky. Several pounds of roast produces a few sandwich baggies of jerky. With all the time and ingredients involved in the process, I doubt budget beef jerky is possible.
My favorite is actually pork Jerky and it is not cheap either.

the meat loses 1/2 to 2/3 of its weight after the water evaporates. So that 1 lb bag of jerky started as 2 lbs of meat.
