I shouldn't dignify you with a response, but I'm gonna answer your question.
In 1983 when my dad when my dad bought a small deli from one of the customers he sold meat to, the world was smaller. You couldn't outsource fresh bread from Nola everyday. He started using a local bakery that made French bread, not Nola style but a good product nonetheless. We'll after 5 years of hard work , and a little luck he had expanded to 3 stores, and all were doing very well. He had in a sense cornered the local market, with his own version of a New Orleans classic.
My wife is from down there and loves our food, I have friends and neighbors from Nola that come in and eat and never question what we do and love our poboys.
Until you come to my place and eat you need to keep your opinions to yourself though.

You do realize that you aren't like most. Many places have no idea what tasso is or a good andouille sausage. These days you can get just about anything shipped, but nothing like going get it from the source the day you want it. I would never want to get boudin out of a box from FedEx, sorry.

I love poboys and have great opinions about them. And so far I haven't mentioned any on your place. All I asked was if you don't compare your sandwiches you sell to anything in NOLA why even call them poboys. That's all I asked.

I've heard good things, but ya'll are all the way over by the Galvez Y! The reason I haven't tried ya'll before is the place is just too far out of the way for me most of the time. I live near LSU, my parents' house is in St. Amant, and my job is near Highland at Airline. Just too far from any of them to make it convenient.

Related: does anyone know any places in BR that use leidenheimer or reisling bread for their poboys? And is that what most places in Nola use?

Pretty sure Randy Montalbano's(sp?) does. Personally, I don't care for it.

Theres a place in Gonzales that does, I know because the bread truck got there before them one day and propped some loaves up against their front door. Bread just chillin in a wax paper sack outside.
