When you're in New Orleans and Creole gumbo is the norm, it makes sense to call a Cajun style gumbo "Cajun gumbo" because it's not the norm there.

Tomatoes never belong in gumbo.



Man...stewed okra and tomatoes sounds good as shite right now though.

Creole roux - butter and flour

starts with the base and the difference go from there. Hell creole gumbo often has roux, file and okra as well so it's generally a little thicker too.

Not all creole has to have tomatoes, just many do.

Cajun gumbo is a term used here, and not many outside the city realize how few cajun places there are to eat in the city.

I wouldn't say never. In a creole gumbo it makes sense.

Not my favorite style, but some love it.

All the tomato talk made me remember why I loved my grandma's creole cooking so much. She cooked creole but was allergic to tomatoes and I still pick tomatoes out of most dishes. So she made creole sans tomato, and had the only non red creole jambalaya I knew of.

When someone would make a Shrimp Creole she would say "You wasted all those good gumbo shrimp in spaghetti red gravy"

We made our prize winning gumbo with bacon fat.

And i’ve Made a bang up duck and andouille gumbo with rendered duck fat.


I’ve actually had some decent creole gumbo. I hate on it more than I should. I shite talk about gumbo a lot. Some things just irk me. Tomatoes in gumbo is one of them.
