Doubt that guy is putting any thought or planning into what he eats beyond "does it contain animal products?". A lot of "ethical" vegans don't give a shite about nutrition. Especially younger ones who are just trying to be trendy. They subsist on junk food, soda, and faux meats that are terrible for you.

Plants 'Scream' in the Face of Stress

Here’s a finding that might give vegans pause for thought: some plants emit an ‘ultrasonic’ scream when they’re stressed out. Researchers placed microphones a few inches from tomato and tobacco plants, deprived them of water and cut their stems. The plants emitted an ultrasonic signal between 20 and 100 kilohertz, the researchers found.
