So how is 58 less than ideal? Storage for long term reds should be between 55-60. Serving temp should be 60-65.

How is that playing "the victim"?
First of all, do you think I am THAT serious? I would think that by now, people who are in the lunch threads, would realize to some small degree, that I post shite in the lunch thread just to get things "going". Sometimes it might be stupid, sometimes it might not be necessary (well that's probably all of the time), sometimes I know it might get someone worked up. All the time it is worthless bullshite. It's the lunch thread. Does anyone post anything worthy of being serious about?

most of what i've seen has said under 60 slows the aging process. more like a 60-65 range. but who knows.

That's the point.
Bold Red wines can be stored 20 years easy if conditions are right. For people who want to store them long term, you need colder conditions. More importantly, the temps should be fairly consistent. I doubt even the best trained Master Som could tell you if a bottle was stored at 55 or 65, but even an untrained nose could tell you that a bottle is spoiled due to extreme temps.
