Different types of rats FYI. The common roof rat has a diet very close to a squirrel here in the USA. The Norway rat which is common in big cities eating garbage and Sewers you se correct.
So the roof rat would likely taste very similar to a squirrel.
FWIW: my knowledge comes from what bait to set in rat traps and very limited.
