You have to fall in love with idea of being healthy and eating to survive more than the idea of stuffing your gut with food that’s so good yet terrible for you.

Yep. It's a lifestyle. Just like going to the gym all of the time.

polyunsaturated fats

Like corn oil and soybean oil? Yikes. Give me the eggs and beef fat every day of the week.

What's the story on eggs these days? People are saying they are bad for you, and I'm not so sure.

Mono and polyunsaturated fats are known anti-inflammatory compounds. Numerous studies have shown reductions in biological and histological markers of inflammation in the presence of these fatty acids.

Ideally you want to obtain these fats from less processed sources such as fatty fish, olive oil, nuts, etc.

I had the most horrific blood work ever...Been on keto diet, in some form or fashion (gram wise) since August 2018. First bloodwork drawn after 2months keto was the best blood work I’ve had in over 20years. This was the first round. I had 3 diagnosis and 5 daily meds. Fast forward to today...3rd bloodwork pulled, all on Keto...best bloodwork I’ve had...my kidney and liver functions are fine as well. All of my numbers are great and while my doctor was not excited about the diet, his opinion has definately changed. Your dad can swap over to a more clean keto...but I did it dirty keto and continue to.

key:
1. Stop eating processed $hit and candy.
2. eat mostly meat

Honestly I never ate a piece of candy in my adult life....now that’s not true, I have...my point being, very little...maybe around Halloween or Easter, be about it and limited. Where I did bad was:
Rice or spaghetti just about every damn meal, if neither present, bet your arse I had bread! Flour covered EVERYTHING, cause...well it’s good! Soft drinks————Potatoes ALL the time! I was a huge starch guy....that’s where my weight came from.

To a segment of your point though and completely unintended side effect. Almost zero inflammation...where I used to have a lot! Maybe it’s a gluten thing? I dunno, but my body is vastly different than before.

Isn't that like 18x the suggested amount of daily cholesterol intake?

Try reading some stuff on dietary cholesterol published after the 1980s.

I swear, the cholesterol myth is so crazy. I once dated a girl who was a Beach Body instructor who ate healthily and had a total cholesterol of 340. I was overweight and ate and drank like shite, and my total cholesterol was 116. So much of that has to do with genetics than it does diet.
