Texas hunting for a bachelor party?

Got a bachelor party in September to plan, unfortunately Vegas is not an option. We started talking about a dove hunt and/or hog hunt in Texas. We live in Lafayette. Any body been on some of those guided dove hunts in texas/Mexico? Any knowledge of an area near a party town like Austin so that we can get some of that in, too?

I went on a dove hunt/bachelor party in Laredo and spent most of our time in Boys Town.
