I am of the opinion you don’t need vv expensive knives, but you need vv sharp ones.

My GF gave me a big set of Wusthof Dreizack, in a briefcase aboot 33 years ago. I have been married to her 29.

I think this is the key, an Asian cleaver is not quality but they get those plenty sharp and a thrill to wash in the hands of an experienced prep cook.

It may be, one day.

Back then it was a $1000 Canadian, but she got it through a wholesaler friend for $300 Canadian. I put the ones I use in a butcher block, and left the specialty stuff in the briefcase, put away.

So like 100 bucks US back then?

Loved the old days when the US dollar was strong and the Canadian was not.
