I liked Kelly Plantation a lot. I forget which hole it is, but it overlooks the bay. The only gripe I had was they had just resurfaced the greens, so they were a bit hard. I'm sure they've got it right, now. Played 3 months or so ago.

you can play their links course for pretty cheap and it is good. LINK
the raven is my favorite of the sandestin courses but it is a little more expensive
regatta bay, like someone else mentioned, is probably the most fun course down there (fair but not overly difficult). i definitely put it ahead of KP.

Four friends and I do a Sandestin golf trip every year. We stay in the neighborhood and rent a house with a golf cart. You can take the cart to the restaurants and shops in front of the complex and to the bars. Its pretty convenient.
As for golf:
Raven - My favorite course in area and its public. Its always in great shape.
Burnt Pine - This course in private, however if you are a member of a club, you can have them call and make you a tee time.
Kelly Plantation - Great layout with fantastic views of the bay. This course is usually in great shape but it needed some TLC when we played it last year.
Wind Swept Dunes - Its about a 20 minute ride east of SanDestin. The fairways and greens are huge but the course plays long. Conditions were great last time we played it.
Regatta Bay - I haven't played this course in a couple of years, but its usually in good shape.
Camp Creek - This course is also East of Destin. Its a fun course to play once or twice. The layout is like a video game and you are forced to make some crazy shots. Conditions were great when we played it.
Baytowne - Fun short course to play. The conditions are hit or miss. We played last year and the greens were full of trash grass.
