that would cause an over amperage and trip the breaker, a GFCI senses current in the ground leg which shouldn't be there, indicating a faulty disposal.

You have two possibilities of what can be faulty. The GFCI or the Disposal. One cost about 20 dollars and a half hour of effort to change. One is both more expensive and more effort.
I'd change out the GFCI first. Less cost and time.
The reason that the GFCI works when you remove the "ground" lug via the adapter is that the GFCI measures for current going to ground. It does this because that is an indication of a "short" condition in the appliance. If you remove the reference ground (via the adapter) altogether, there is no way to measure that current.
This means that more than likely, you have a bad appliance. I'd still change out the GFCI to be sure before I replaced the disposal.

Except he already confirmed a faulty disposal by plugging it into a separate GFCI outlet via extension cord. It tripped the other outlet too. Unless both outlets went bad at the same time I think it’s safe to conclude the fault is in the disposal. Not hard or too time consuming to switch out.
