I grew up in a very rural part of Mississippi and we would get a side of beef every year from my aunt's herd that had been grass-fed it's whole life from weaning to butchering. we would end up eating a bunch of gravies, slow-cooked roasts and a lot of ground meat. It was considered low quality and poor mans beef.

Fast forward 40 years and now that trash is considered high quality


If I want quality beef, I want it well marbled and tender not lean and tough like grass fed beef usually is.
