I'd been wanting to get a ride rice cooker anyway. I'd actually seen this, and white it looked cool, I wasn't going to pay $120. But for $70, and hearing people rave about it, why not?

I cook seafood gumbo is ours all the time. I cook down my veggies first on saute. I don't always make my own roux though. I just use a name brand mix in a box. Comes out great. We actually like to get two different brands and mix them together.
I don't use the pressure cooking to do it though. I just use the saute option.. I don't like the way gumbo comes out when pressure cooked. The versatility is what is so nice about it. You can even put it on slow cook if you want after high cooking with a boil.
(keep in mind the saute option only stays on for 30 minutes *i think*.. so you may need to hit it again. this is actually nice because it's safe if you forget it's on and it's no biggie to turn back on)
I like that I have two of these though, because we cook our gumbo in one and I pressure cook rice in the other. Remember rice for the instapot only needs the same amount of water as rice.. ex: 2 cups rice 2 cups water
I also cook chicken or turkey spaghetti in it with the saute option.. do my meat cooking first.. then put in my sauce..
If some people for whatever reason didn't have a stove or anything, they could probably make-do with this thing. Have even had success making ribs in it.
It does great making chili, tortilla soups, and beans as well.. Or using the steam rack to cook cauliflower, broccoli, cabbage.. I probably use it most for rice cooking though. Love not having to watch it or keep up with my cooking all the time.
The best thing you can do is research how long certain things take to pressure cook online. Then you can manually cook it according to the times recommended. With the steam rack you can boil eggs on pressure cook.. the manual time recommended is 4 minute to 5 minutes set.
It would be cool if there was a thread dedicated to cooking with it.

Awesome info. I can say that I did not go to kick arse torrents last night and didn't download any cookbooks. I definitely didn't download the America's test kitchen book. I'd never do that.
Considering half the ot bought one yesterday, I'd be shocked if it that thread didn't start by Thursday night. I would cook up some shredded beef tacos, if I didn't have to practice Thursday for a weekend gig.
