I'm looking at used entry level planes and have narrowed it down to Piper Cherokee or Cessna 172.
Leaning to Piper, but interested in any experienced thoughts.

172. Much more stable airplane. Check out 182 if possible.

What are you planning on using it for?

172. Easy to find parts if you need them too

MO20, SR22, or COL3

Whatever you do, buy a plane you can control if the engine fails. Every pilot I've ever known has endured engine failure at some point. Many twin engine planes have killed their owners when they couldn't control it with only one engine.

500 mile run between NOLA and Dallas about 2x a month.
(you haven't forgotten our venture have you?)

I think the piper may be a little faster but I'm not sure. Cessna' are super easy to fly though and like someone else said easy to find parts and maintain although I'm sure Piper parts are readily available. Let me come fly with you when you get it bro.
