Your first sentence isn’t true. I wasn’t aware that Hollywood portrayed the Jews as the builders of the pyramids.
Yes, a large Jewish slave presence in ancient Egypt, as well as the exodus story isn’t true.
The Bible doesn’t mention them because no writer of any of the books of the Bible was ever in Egypt. That’s pretty simple.

It's not difficult to believe some people were held as slaves by the dominant power in the region 3000 years ago. Much more plausible than the pyramids were built by aliens and had hydraulic elevators.
