The only time I see mayo in a fridge is at a persons home. Restaurants do not refrigerate mayo.

Mayonnaise, unless it is homemade with raw unpasteurized eggs is not a medium for pathogenic bacterial growth. The mayonnaise may turn rancid, but it will not make you ill.
In the case of a potato salad, it is the Staphylococcus aureus from the potato that will make you sick within hours of ingesting it.

I know people that keep mayo in pantry. Never got sick off of it. I'm not brave enough to try it.

The mayo you buy in the store has all kinds of stuff in it to keep the bateria from growing.
Real mayo (as in French style where you make it yourself from scratch) is basically food for bacteria. They love it and you'd better consume within half an hour, preferably less.
